Artemisia dracunculus is known as tarragon and belongs to parsley, chives and chervil to the classic French herbal mixture fines herbes.

The young leaves and shoots of tarragon are used, for example, for seasoning pickled cucumbers, sauces and marinades (eg sauce béarnaise) and in the production of vinegar and mustard. However, tarragon is also suitable for seasoning lettuce, cottage cheese, herb butter and soups, poultry, rice or boiled fish.
